Hazelnut flavored biscotti is another one of my favorite cookies. Every time I walk into a cafe or go to an Italian restaurant I’m always looking for where they might be hiding these from me. You would think I would learn to make them by now but I was always intimidated because they seemed so special. Well I finally did make them and they are very easy to make that I hit myself for not making them sooner. The dough takes only five to ten minutes to make and you can make any type of variations you like!

Recipe: Hazlenut Almond Biscotti’s

Summary: Fancy yet easy to make biscotti’s
Ingredients
- 3-3 1/2 cups All Purpose Flour
- 1 cup white sugar
- 1/4-1/2 cup sliced almonds ( up to your own taste )
- 1 1/4 tablespoon baking powder
- 2 tablespoon Hazelnut Flavoring ( usually found in coffee section of your grocery store)
- 1/2 tablespoon vanilla extract
- 1/2 tablespoon almond extract
- 3 eggs beaten
- 1/2 cup vegetable oil
- 1 teaspoon kosher salt

- Parchment paper
- Cookie Sheet

Instructions
- Preheat your oven to 375 degrees Fahrenheit.
- In a large bowl, place the eggs, salt, sugar, and all flavorings and extracts inside and mix well.
- Add in the baking powered and 3 cups of the flour, and almonds and slowly mix and fold the flour into the mixture. It will start to thicken and be though to mix. It will take on a yellow color and slowly firm up but still be very soft and pliable.
- Continue to mix and add additional flour slowly if the dough is still very sticky. The dough SHOULD be sticky however, and it may tear easily but you don’t want it to be so sticky that it’s completely un-kneadable.
- Knead the sought, you may have to add a pinch of flour to your hands, and then split into two halves.
- Take one half and roll out the dough into a small log shape in your hands and finish rolling out on your cookie sheet. Make the log as long as you can while still keeping a thickness of a half inch at minimum. You may wet your hands slightly at this point to make flattening the logs with your hands easier and fixing the shape. Repeat with other half.
- Place into oven for about 25-30 minutes or until golden brown. If the edges are darkening quicker then the top, just let the top get as close to golden brown as you can.
- Pull out the loves and slide the parchment paper onto the countertop or cutting board to let cool.
- In about 3-5 minutes using either a pizza cutter or a very sharp knife, cut the logs into half inch slices vertically.
- Flip each slice one one side and bake again for another 6-9 minutes
- Take out from the oven and flip them done more time onto the other side and bake again for another 6-9 minutes.
- Finally pull them out and pull the parchment paper onto a cool surface to let them cool down.
- Dip in chocolate or eat as is!
Quick Notes
- If you’re using hazelnut extract instead, follow the strength recommendations to flavor a cup of coffee.
Variations
- Dip in chocolate
- Add chocolate chips, hazelnuts, almonds, cranberries, pistachios to the mix.
