Fresh Homemade Mayonnaise

A  condiment of royal stature among its peers, fresh mayonnaise is a delicious creamy substance that is a base for many other great condiments as a foundation. I personally have never liked mayonnaise very much,  but like many things in the food world, having processed mayonnaise out of a packet at a fast food place and having it freshly made and served is completely different experience.  Yet you can have it at home easily, because mayonnaise is actually very simple to make and you can taste it to your liking.

Summary: A simple and refreshing mayonnaise

Ingredients

  • 2 egg yolks or pasteurized egg yolks for those worried about salmonella
  • 1 tablespoon of lemon juice ( about half a lemon )
  • 1/2 – 1 tablespoon White Vinegar or Champagne Vinegar ( use amount to your taste)
  • 1 – 1 1/2 teaspoon of salt to taste
  • 8-12oz or 1-1 1/2 cup of canola oil or mix with olive oil in any combination. Just one oil by itself is fine also.

Equipment

  • Immersion blender
  • Glass beaker or Tall cylinder glass that your immersion blender will fit in.

Instructions

  1. If your immersion blender came with a beaker or glass to mix things, use that or use a tall wide glass that will fit your immersion blender.
  2. Place the egg yolks, then the lemon juice, then vinegar, and finally the oil in the glass.
  3. Let everything settle in the glass giving it a minute or two.
  4. Place your blender slowly into the bottom of the glass and holding it to the bottom pulse the blender a few times slowly.
  5. Continue to pulse the blender until you see it getting thick and white and then slowly move the blender up the glass to continue to incorporate the rest of the oil.

Quick Notes

  • NOTE: This recipe uses raw eggs. If you are worried about salmonella you can purchase pasteurized eggs to use instead. Processed egg yolks don’t work as well here.
  • For those that don’t have a blender, you can do this by hand. Add all the ingredients into a bowl excel the oil and whisk by hand heavily for a minute or two to break up the egg. Then very slowly, drop by drop in the beginning, add the oil while whisking quickly. Continue to do this and adding oil until the mayonnaise forms and is the thickness you desire.

Variations

  • Add chipotle to the mayonnaise and blend to make spicy sandwich topping
  • Add wasabi powder and some Asian flavors to make a great salad dressing or use in sushi rolls.
